Einkorn (Triticum Monococcum) with 2n=14 chromosomes is genetically the simplest type of wheat. The majority of wheat produced today has 42 chromosomes. It has originated in Turkey’s highlands over 12,000 years ago and is rare ancestral wheat. Gluten exists in its most primitive structure within Einkorn.

We, as the A&L ORGANIK, decided to bring EINKORN back to life and help sustain it. Thus, we collaborated with organic farmers in the Kastamonu region. Our stone mills were a perfect match for grinding this ancestral wheat and we are proud to offer our customers our unique organic EINKORN wheat flour.

Characteristics of Organic EINKORN Wheat and EINKORN Wheat Flour:

●Due to the fact that organic wheat is grown on virgin soil, its vitamin and mineral content is higher than that of conventional wheat. It also has a richer taste.

●It is ancestral wheat with a 2n =14 chromosome structure and is genetically pure.

●It is the first and only product selected from Turkey at Presidium, which is also known as Noah’s tastes.

●It has high antioxidant content. It protects cell structure, detains aging.

● It has low carbohydrate and high protein value.

●As the wheat is ground as a whole in stone mills, it contains high amounts of mineral and cellulose, it supports the regular function of intestines and is considered to help prevent intestine cancer.

●Due to its folic acid content; it is a suitable food source for children and expecting mothers.

●The primitive gluten it contains is more easily digested than that of the gluten found in the evolved wheat. When used with sourdough the digestion process is even easier since the sourdough will help dissolve the primitive gluten. However, it is not recommended for coeliac patients and those having gluten sensitivity.
